Fluffy focaccia dimpled and studded with briny olives is a classic mediterranean bread. A vegetarian favorite that's fresh, family-friendly, and pairs with everything.
In a large mixing bowl, combine the all-purpose flour, instant yeast, and kosher salt, mixing until evenly distributed.
Pour in warm water and 2 tablespoons of extra-virgin olive oil; mix with a spatula until a shaggy dough forms, ensuring all the flour is hydrated.
Knead the dough on a lightly oiled surface for about 6 minutes until smooth and elastic, then transfer to a greased bowl; cover and let rise at room temperature for 60–90 minutes until doubled in size.
Gently deflate the dough, then stretch it into a well-oiled 9x13-inch pan. Let it rest for 20 minutes, then use oiled fingertips to dimple the surface deeply.
