Spatchcocked chicken grilled with chili and lemon — devilishly good and crispy-skinned. This high protein chicken dish is a fresh mediterranean family dinner, perfect for keto or calorie deficit plans.
Preheat your grill to medium-high heat (around 400°F).
Spatchcock the chicken by cutting along both sides of the backbone with kitchen shears, then flatten it breast side up and press firmly to crack the breastbone.
Make a marinade by mixing olive oil, juice and zest from the lemon, finely chopped chili, minced garlic, sea salt, and black pepper.
Coat the spatchcocked chicken thoroughly with the marinade, massaging under the skin for extra flavor; let rest for 15 minutes.
Place the chicken skin side down on the grill and cook over direct heat for 10 minutes; then flip, reduce the heat to medium, cover, and grill for another 25–30 minutes until the skin is crisp and the internal temperature reaches 165°F.
Rest the chicken off the grill for 5 minutes before carving to retain juiciness.
