Dongbei stewed chicken with mushrooms and vermicelli is a hearty, comforting one-pot meal. A high protein chicken dish perfect for a cozy family dinner.
Soak dried shiitake mushrooms in warm water for 20–30 minutes until soft; reserve soaking liquid. Soak mung bean vermicelli in warm water for 10 minutes, then drain and cut into manageable lengths.
Heat vegetable oil in a large Dutch oven or heavy pot over medium-high heat. Sear chicken pieces on all sides until golden, about 6–8 minutes; remove and set aside.
Add ginger slices, garlic, and green onion to the same pot, sauté until aromatic, about 1 minute. Stir in mushrooms and cook for 2 more minutes.
Return chicken to the pot. Add soy sauce, dark soy sauce, Shaoxing wine, sugar, black peppercorns, and mushroom soaking liquid (strained, about 2 cups). Add carrot and potato pieces. Mix well and bring to a boil.
Reduce heat to low, cover, and simmer gently for 40–50 minutes, stirring occasionally to prevent sticking. Adjust with more water if needed.
Add soaked vermicelli on top of stew during the last 10 minutes of cooking. Let the vermicelli absorb the flavors, keeping heat low to avoid overcooking.
Remove lid and check seasoning. Stir gently to incorporate vermicelli. Finish with a sprinkle of chopped green onion, then serve hot.
