Chicken fried rice loaded with vegetables, scrambled eggs, and savory soy sauce is a one-pan family dinner. This protein-rich chicken dish uses leftover rice for a quick, satisfying meal.
Dice the chicken breast into bite-sized pieces and finely chop carrots and green onion.
Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the diced chicken and cook for 4–6 minutes, stirring occasionally until browned and cooked through.
Push chicken to one side; add remaining vegetable oil, then pour in beaten eggs. Scramble gently until just set, then mix with chicken.
Add carrots and green peas. Stir-fry for 2–3 minutes until vegetables are tender but still crisp.
Add cooked rice, soy sauce, sesame oil, black pepper, and salt. Toss everything over high heat for 2–3 minutes, ensuring rice is heated through and evenly coated.
Fold in chopped green onion and stir for an additional minute, then remove from heat and serve hot.
