Flour tortillas filled with al pastor pork, melted cheese, and grilled pineapple. These protein-packed, sweet-and-savory treats are a family-favorite variation on classic tacos al pastor.
Combine achiote paste, oregano, cumin, chipotle chili powder, garlic, lime juice, salt, and 1 tbsp oil in a bowl to form a marinade. Coat the pork slices evenly and let marinate at least 30 minutes (up to overnight for deeper flavor).
Preheat a large skillet or grill pan over medium-high heat. Add 1 tbsp oil, then cook pineapple slices for 2–3 minutes per side until caramelized. Remove and chop roughly.
In the same pan over medium-high heat, cook the marinated pork slices in batches, making sure not to overcrowd. Sear each side for 2–3 minutes until cooked through and slightly crisp at the edges. Transfer to a plate and slice into strips.
Wipe the pan clean and set over medium heat. Place one flour tortilla in the pan, sprinkle 0.25 cup mozzarella over half. Add a fourth of the pork and pineapple, fold over, and cook 2 minutes per side until golden and cheese melts. Repeat for all tortillas.
To serve, open each gringa and top with chopped onion and cilantro. Cut into wedges and enjoy hot.
