Tahiri is a flavorful Indian rice dish with aromatic spices and a distinct regional character. This vegetarian preparation is a versatile family side dish that pairs well with curries and raita.
Rinse basmati rice thoroughly with cold water until water runs clear, then soak it for 20 minutes while you prep the other ingredients.
Heat vegetable oil in a heavy-bottomed pot over medium heat. Add cumin seeds, bay leaf, cloves, and cinnamon stick; sauté for 30 seconds until fragrant.
Add chopped onion and green chili. Sauté on medium-high heat for 4–5 minutes until onions turn golden brown.
Stir in chopped tomato, ground turmeric, and ground coriander. Cook for 3 minutes until the tomato softens, then add the mixed vegetables and cook for another 4 minutes, stirring occasionally.
Drain the soaked rice and add to the pot. Gently stir to coat rice with vegetables and spices. Pour in water and salt, bring to a boil, then reduce heat to low. Cover tightly with a lid and simmer for 16–18 minutes until rice is cooked and water is absorbed.
Turn off the heat and let the pot rest, covered, for 5 minutes. Fluff gently with a fork and garnish with fresh cilantro before serving.
