Hearty Tuscan black kale soup with cannellini beans and bread is robust and nourishing. A vegetarian high protein mediterranean meal ideal for clean eats and healthy family dinners.
Heat 3 tbsp extra virgin olive oil in a large pot over medium heat. Add diced onion, celery, and carrot. Sauté for 8 minutes, stirring often, until vegetables soften but do not brown.
Add minced garlic, rosemary, and thyme. Stir for 1 minute on medium-low until fragrant, avoiding burning the herbs.
Add the torn rustic bread and stir well to coat bread with oil and aromatics. Cook for 2 minutes to lightly toast edges.
Stir in the cavolo nero (lacinato kale), allowing it to wilt for 3 minutes on medium heat, then add the drained cannellini beans and mix thoroughly.
Pour in the vegetable broth and bring to a gentle boil. Reduce to low, season with salt and black pepper, cover, and simmer for 30 minutes to meld flavors.
Taste and adjust seasoning. For a thicker texture, use the back of a spoon to gently mash some of the beans and bread. Let the soup rest off the heat for 5 minutes before serving.
