Thin chayote slices are stir-fried with garlic until tender-crisp and lightly seasoned. This vegetarian, healthy family side is virtually calorie-free and perfect for weight loss meal plans.
Peel the chayote squash, cut in half, remove the core, and slice thinly into 1/8-inch half-moons.
Smash and finely chop the garlic cloves for even aroma release.
Heat a large skillet over medium-high heat and add the olive oil.
Once the oil is shimmering, add the garlic and sauté for 30–45 seconds until fragrant but not browned.
Immediately add the chayote slices, stirring constantly. Continue stir-frying over medium-high heat for 4–5 minutes until chayote is bright green and just tender-crisp.
Season with salt and black pepper, toss briefly, and remove from heat to avoid overcooking. Serve warm.
