Simple yet aromatic, Vagharelo Bhat is a traditional Indian rice preparation with authentic spicing. This vegetarian dish is a family kitchen staple that adds variety and flavor to everyday meals.
Heat 2 tbsp oil in a large skillet over medium heat. When the oil shimmers, add mustard seeds and cumin seeds, letting them sizzle for about 30 seconds until the seeds start to crackle.
Add the chopped onion and green chili. Sauté over medium-high heat for 3 to 4 minutes, until onion turns translucent but not browned.
Stir in diced tomato, turmeric powder, and red chili powder. Cook for 2 to 3 minutes, stirring occasionally, until tomatoes soften and the spices turn aromatic.
Add cooked white rice to the skillet and sprinkle salt evenly. Mix thoroughly to combine the rice with the seasoned vegetables and spices. Continue to toss gently for 3 to 4 minutes over low heat to avoid breaking the rice grains.
Turn off the heat, garnish with chopped cilantro, and let the Vagharelo Bhat rest covered for 5 minutes so flavors meld before serving.
