Rinse lentils thoroughly, then soak briefly in cool water while prepping other ingredients to ensure even cooking.
Heat olive oil over medium heat in a large heavy-bottomed pot; sauté finely chopped onion, carrot, and celery for 6-7 minutes until soft but not browned.
