Lauki Kofta Curry is a light, nutritious Indian vegetable dish that's naturally low in calories and gentle on digestion. This healthy vegetarian preparation is ideal for weight loss, bariatric diets, and family everyday meals.
Squeeze excess water from the grated bottle gourd, then combine with besan, a pinch of salt, and half of the green chili in a bowl. Mix just until it forms a light, sticky dough.
With damp hands, shape the mixture into small balls (koftas), about the size of large marbles for even cooking.
Heat 2 tablespoons oil in a nonstick pan over medium heat. Once hot, carefully shallow-fry the koftas, turning gently, until all sides are golden but still moist inside—about 8 minutes. Set aside on paper towels.
For the curry, heat the remaining oil in a deep skillet. Add cumin seeds; when sizzling, add the onions and sauté on medium-low heat until translucent (about 4 minutes), to avoid browning.
Add ginger, remaining chili, turmeric, red chili powder, and coriander powder. Stir for 1 minute, then add pureed tomato and cook on medium heat until oil separates and the mixture thickens (about 7 minutes), stirring occasionally to prevent burning.
Add salt, garam masala, and 1 cup water. Let the curry simmer for 6–8 minutes on low heat for flavors to meld.
Gently add the fried koftas to the simmering curry. Cover and cook on lowest heat for 4 minutes to absorb flavors. Do not overcook or stir vigorously—this preserves the koftas’ texture.
Serve hot, garnished with fresh cilantro if desired.
