Tangyuan in sweet fermented rice soup is a fragrant, warming dessert. A family recipe with naturally sweet, probiotic-rich broth.
Combine the glutinous rice flour and water in a mixing bowl and knead for 3–4 minutes until a soft, smooth dough forms; cover with a damp cloth to rest for 10 minutes.
Divide the dough and roll into small balls, about 1-inch diameter, making sure they are uniform for even cooking.
In a medium pot, bring 4 cups of water to a gentle boil over medium heat and add the ginger slices.
Drop the tangyuan balls into the simmering water; stir gently to prevent sticking and simmer over medium-low heat until they float (about 4–5 minutes).
Add the sweetened fermented rice, sugar, and salt to the pot; gently stir and let it heat through on low heat for 2–3 minutes—do not boil to preserve the probiotics.
Ladle tangyuan and soup into serving bowls; serve warm.
