Pat shrimp dry and toss with 0.5 tsp kosher salt and 0.25 tsp black pepper. Let sit for 10 minutes.
Prepare a dredging station: bowl 1 with flour and cornstarch mixed, bowl 2 with beaten eggs, bowl 3 with panko. Coat each shrimp in flour mix, then egg, then panko. Press panko firmly for adhesion.
Heat neutral oil in a deep pot to 350°F over medium-high. Maintain this temperature throughout frying for crispness and even cooking.
