A bowl of miso soup with tofu is warming and probiotic-rich for almost no calories. It's the Japanese answer to eating light without feeling empty.
Soak the dried wakame seaweed in cold water for 5 minutes until it expands. Drain well and set aside.
Cut the soft tofu into small 1/2-inch cubes for an even bite and gentle texture.
Bring 3 cups of water to a gentle simmer in a medium saucepan over medium heat (do not boil).
Add the rehydrated seaweed and tofu cubes to the simmering water, and cook for 3 minutes. Stir gently to avoid breaking the tofu.
In a small bowl, dissolve white miso paste with a ladleful of hot broth, then stir the mixture back into the pot. Turn the heat to low and make sure not to let it boil, preserving the miso’s probiotic qualities.
Add soy sauce for seasoning and heat through for 1 minute. Remove the pot from the heat, then garnish with sliced green onion just before serving.
