Heat olive oil in a large skillet over medium-high heat. When the oil shimmers, add the chicken and sear each side for 4–5 minutes until golden, then reduce heat to low and cover. Cook for an additional 10 minutes, ensuring the chicken cooks through without drying.
While chicken cooks, toast walnuts in a dry pan over medium-low heat for 3–4 minutes, stirring constantly to avoid burning, until fragrant.
In a blender, combine toasted walnuts, milk, white bread, sautéed onion and garlic, and remaining salt. Blend until smooth and creamy, adjusting texture with an extra splash of milk if needed.
