Chicken wings are slowly braised in a rich soy and ginger sauce until fall-off-the-bone tender. This family-friendly dish delivers impressive protein content while being simple enough for weeknight cooking.
Pat chicken wings dry and cut any large segments in half. Finely slice the ginger and chop the garlic.
Heat a large Dutch oven over medium-high heat. Sear chicken wings on both sides in batches until golden brown. Remove to a plate.
In the same pot, reduce heat to medium. Add onion, ginger, and garlic, stirring until fragrant and softened, about 3 minutes.
Return the wings to the pot. Add soy sauce, dark soy sauce, brown sugar, rice wine, black pepper, and water. Stir to coat evenly.
Bring to a gentle simmer, cover with a lid, and braise on low heat for 40 minutes, turning wings halfway. Remove lid and cook uncovered for an additional 10 minutes to thicken the sauce.
Garnish with chopped scallions before serving. Serve hot over rice or as desired.
