Simple, nutritious, and deeply satisfying, Aloo Matar Gravy is a traditional Indian vegetable dish for the whole family. This healthy vegetarian preparation supports weight loss goals and fits easily into balanced meal plans.
Peel and cube the russet potatoes into 1-inch pieces. Dice the onion and tomatoes separately.
Heat vegetable oil in a deep skillet over medium heat. Add cumin seeds and allow them to sizzle for 20 seconds until fragrant.
Add diced onion and sauté for 4-5 minutes on medium-high heat, stirring frequently, until golden brown. Add ginger-garlic paste and cook for another minute, stirring to avoid burning.
Stir in chopped tomatoes, ground turmeric, coriander, red chili powder, and salt. Reduce the heat to medium and cook until tomatoes soften and the spices release oil, about 5-7 minutes.
Add the cubed potatoes and green peas to the onion-tomato masala. Mix well, then pour in 1 cup of water. Cover and simmer on low heat for 18-20 minutes, until potatoes are fork-tender.
Uncover, increase heat to medium, and add garam masala. Adjust consistency with more water if needed, and simmer for another 2 minutes.
Check seasoning, garnish with chopped cilantro, and serve hot with rice or flatbread.
