Tender dim sum chicken feet in a savory black bean sauce are a Cantonese favorite. A protein-rich, family-style dish with bold, authentic flavor.
Clip chicken nails from the chicken feet and clean thoroughly under cold water, then blanch in boiling water for 5 minutes to remove any impurities.
Drain the chicken feet and pat them very dry with paper towels. Heat peanut oil in a deep pot to 350°F, then fry the feet in batches for 4–5 minutes until golden and puffy. Remove and drain on a rack.
Transfer fried chicken feet to an ice water bath to soak for 2 hours for a signature soft, wrinkled texture.
In a wok, heat 2 tbsp peanut oil over medium heat. Sauté minced garlic and scallions until aromatic, then add the drained chicken feet, tossing to coat.
Stir in fermented black beans, soy sauce, rice wine, oyster sauce, sugar, white pepper, and 1 cup water. Cover and simmer on low for 1 hour, stirring occasionally, until chicken feet are tender and infused with sauce.
Uncover, add sesame oil, and simmer for an additional 5 minutes on medium heat to slightly reduce the sauce. Serve hot, garnished with extra scallions if desired.
