Ellu Bella is a treasured Indian confection that brings sweetness and joy to every celebration. This traditional dessert is lovingly prepared for family festivals, religious occasions, and special moments.
Heat a dry skillet over low heat and gently roast white sesame seeds, stirring often, for 2-3 minutes until they pop and turn aromatic. Take care not to brown them.
In the same pan on medium heat, dry-roast the peanuts for 3-4 minutes, stirring constantly, until golden and crisp. Let them cool, then remove skins and halve them.
Lightly roast chopped dried coconut pieces on low heat for 2 minutes until pale golden but not browned. Set aside to cool.
Roughly chop jaggery cubes into small, even bits. Combine with roasted chana dal, prepared peanuts, coconut, and sesame seeds in a large bowl.
Sprinkle cardamom powder over the mix and toss all ingredients thoroughly for an even distribution of flavors and textures. Serve fresh, or store in an airtight jar.
