Preheat a large nonstick skillet or griddle over medium heat to allow even browning without burning the bread.
Spread ½ tablespoon of butter on one side of each rye bread slice for perfect crispness.
Place 4 bread slices butter-side down, layer each evenly with 2 oz corned beef, a slice of Swiss cheese, ⅜ cup sauerkraut (well-drained), a sprinkle of black pepper, and about 2 tbsp Thousand Island dressing.
Top with the remaining bread slices, butter-side up. Press gently to compact ingredients and prevent the sandwich from falling apart during grilling.
