Cut the pork shoulder, beef shank, and chicken leg quarters into large chunks, trimming excess fat.
In a large stockpot, combine all meats and cover with 14 cups of cold water. Add salt, peppercorns, garlic, and bay leaves. Bring to a boil over medium-high heat, then skim off any foam.
Once boiling, reduce heat to a low simmer and partially cover. Let cook for 1 hour, occasionally skimming fat and adjusting heat to maintain a gentle simmer.
Add chopped potatoes, carrots, and chayote squash to the pot. Return to a steady simmer and cook for 30 minutes.
Add corn pieces, cabbage wedges, and white rice. Continue simmering uncovered for 40–50 minutes, until meats are tender and vegetables are just cooked but not mushy.
