Crispy turnovers filled with shredded chicken in rich mole sauce. These protein-packed empanadas bring the complex flavors of mole into a portable, family-friendly format.
Heat 2 tbsp vegetable oil in a skillet over medium heat. Sauté the chopped onion until translucent, about 4-5 minutes.
Add shredded chicken to the skillet and stir for 1-2 minutes to heat through. Pour in prepared mole sauce, salt, and black pepper; simmer gently for 5 minutes on low heat, stirring occasionally to prevent sticking.
Remove the mole chicken filling from heat and stir in chopped cilantro. Let the filling cool to room temperature for easy handling.
Lay out empanada dough discs on a flat surface. Place 2 heaping tablespoons of cooled mole chicken filling into the center of each disc. Fold over and press edges with a fork to seal tightly.
Preheat oven to 400°F (200°C). Arrange empanadas on a parchment-lined baking sheet. Brush tops with a little vegetable oil for crispness.
Bake empanadas in the middle rack for 22-25 minutes, rotating the tray halfway through. Bake until golden and crisp. Cool for 5 minutes before serving.
