Lay veal cutlets between sheets of plastic wrap and pound gently with a meat mallet until 1/8 inch thick for even quick grilling.
Rub both sides of the pounded veal with 1 tbsp olive oil and season generously with kosher salt and black pepper.
Preheat a grill or grill pan to high heat; brush with 1 tbsp olive oil just before placing the veal.
Grill veal for 1–2 minutes per side until lightly golden and just cooked through; do not overcook, as veal dries out quickly.
Arrange grilled veal over a bed of arugula, drizzle with the remaining olive oil, and squeeze fresh lemon juice over the top immediately before serving.
