Whole baby goat roasted over an open flame is Monterrey's most iconic dish. This high protein, carnivore specialty is a family celebration centerpiece with rich, smoky flavors.
Prepare the whole baby goat by rinsing thoroughly and patting dry. Trim excess fat, but leave some to enhance flavor and moisture during roasting.
Mix coarse salt, black pepper, dried oregano, and olive oil to create a marinade. Rub the marinade generously over the goat, inside and out, ensuring full coverage.
Slice the onion and crush the garlic cloves. Fill the cavity of the goat with onion and garlic for aromatic infusion during slow roasting.
Build an open wood or charcoal fire. Position the goat above indirect heat, bone side down, suspended or on a grill rack. Maintain a steady roasting temperature, aiming for 250–275°F (120–135°C).
Roast the goat for 4 hours, basting regularly with remaining marinade to prevent drying. Rotate occasionally for even cooking. Internal temperature should reach 165°F (74°C) at the thickest part. Rest for 15 minutes before carving and serving.
