Savory Ligurian vegetable pie in flaky pastry showcases seasonal greens and fresh ricotta. A vegetarian mediterranean dish packed with protein, perfect for family lunches and meal prep.
Preheat the oven to 375°F. Prepare the pastry dough by mixing flour, butter, salt, and water. Knead briefly and chill for 20 minutes to rest.
Wash and chop the spinach and chard. Sauté greens in olive oil over medium heat for about 5 minutes, just until wilted; cool completely before mixing.
In a large bowl, combine ricotta cheese, sautéed greens, eggs, parmesan, black pepper, and nutmeg. Mix thoroughly until evenly blended.
Roll out the dough on a lightly floured surface into a 12-inch circle. Line a 9-inch pie pan, pressing gently to fit, and trim excess edges.
Fill the pastry with the ricotta and vegetable mixture. Smooth the filling and bake for 40–45 minutes, until the pastry is golden and the filling is set. Cool 10 minutes before slicing.
