Tender pork and translucent winter melon create a light, refreshing soup. This healthy, protein-boosted family soup is low calorie and perfect for calorie deficit or weight loss plans.
Cut the boneless pork shoulder into bite-sized cubes and rinse under cold water.
Place pork pieces in a pot with enough water to cover. Blanch over high heat until scum rises, then drain and rinse.
Add 6 cups fresh water to the pot, along with the pork, sliced ginger, and scallion whites. Bring to a boil, then reduce to a gentle simmer and cook uncovered for 35 minutes.
Peel and cut the winter melon into chunks (about 1-inch). Add winter melon to the soup and continue simmering for 15 minutes, until melon appears translucent and tender without disintegrating.
Season the soup with salt and white pepper. Just before turning off the heat, drizzle in sesame oil and sprinkle sliced green scallion tops. Serve hot.
