Creamy coconut jelly with tropical flavor and bouncy texture is a refreshing dessert. A family recipe with fresh coconut milk and light sweetness.
Bloom the gelatin: In a small bowl, sprinkle gelatin powder over 1/2 cup of the water (from the ingredient list) and let sit for 5 minutes to fully hydrate.
Combine coconut milk, whole milk, remaining 1/2 cup water, sugar, and salt in a saucepan. Heat over medium-low, stirring frequently, until sugar dissolves and mixture is hot but not boiling (~90°C/195°F). Do not let it boil to preserve creaminess.
Remove saucepan from heat. Add bloomed gelatin and stir continuously until completely dissolved. Ensure no visible gelatin grains remain.
Stir in the vanilla extract. Pour the mixture through a fine sieve into a large measuring cup or pitcher to prevent lumps.
Carefully pour into serving molds or a tray. Cool at room temperature for 20 minutes, then cover and refrigerate for at least 2 hours until fully set and the texture is bouncy.
To serve, unmold the jelly by running a knife around the edges or cutting into cubes directly. Serve chilled for best flavor.
