Rinse rice and urad dal thoroughly, then soak both in water for 1 hour to hydrate and soften.
Drain the soaked ingredients, then grind them together to a slightly coarse batter consistency—do NOT make it too fine.
Add salt and let the batter rest for a minimum of 4 hours in a warm area to ensure light fermentation.
Heat ghee in a skillet over medium heat; add cumin seeds, black pepper, chopped ginger, asafoetida, and cashew nuts. Sauté until cashews turn golden brown and spices release their aroma.
Fold the tempered spice mixture into the fermented batter, mixing gently so the texture remains airy.
Prepare idli molds by lightly greasing them with ghee, then fill each mold with the batter. Steam for 20 minutes on medium-high heat without opening the lid prematurely.
