Garlic Naan is a soft, tandoor-baked Indian bread with a pillowy texture and subtle charred flavor. This classic accompaniment is essential for family curry nights and Indian feasts.
In a large bowl, dissolve the sugar and yeast in warm water and let it sit for about 10 minutes until frothy.
Add flour, salt, yogurt, and milk to the yeast mixture. Mix with a spoon until a shaggy dough forms, then knead for 6–8 minutes until smooth and elastic.
Cover the dough with a damp towel and let it rise in a warm place for 1 hour, or until doubled in size.
Divide the risen dough into 6 equal balls. On a floured surface, roll each ball into an oval about 1/4-inch thick.
Mix minced garlic and chopped cilantro. Brush one side of each naan with melted butter and sprinkle the garlic-cilantro mixture evenly over the top, pressing gently to adhere.
Heat a cast iron skillet over medium-high heat until very hot. Place a naan buttered-side down and cook for 1–2 minutes until bubbles form and the bottom has golden brown spots. Flip and cook for another 1–2 minutes.
Remove from the skillet and brush with extra melted butter if desired; repeat with remaining dough.
Wrap finished naans in a clean towel to keep them soft until serving.
