Pan-fried tofu is stir-fried with pungent fermented black beans and peppers for intense umami depth. This vegetarian, high protein dish fits well into a healthy, calorie deficit-friendly eating plan.
Cut the firm tofu into 1-inch cubes and pat them dry with paper towels to remove excess moisture.
Heat 1 tablespoon of vegetable oil in a large nonstick skillet over medium-high heat; carefully add tofu cubes in a single layer and fry for 4–5 minutes per side until golden and crisp.
Remove crispy tofu and set aside. Add the remaining 1 tablespoon vegetable oil to the skillet, lower heat to medium, and stir-fry sliced red and green bell peppers for 2 minutes until slightly softened.
Add minced garlic and rinsed, coarsely chopped fermented black beans; sauté for 1 minute until fragrant, taking care not to let the garlic burn.
Return tofu to skillet. Add soy sauce, sugar, and water; gently toss all ingredients together. Stir-fry for 2–3 minutes, allowing tofu to absorb the black bean sauce and for most liquid to reduce.
Drizzle with sesame oil, add sliced scallions, give a final toss, and serve hot.
