Mixed mushrooms and firm tofu are stir-fried in a savory sauce for a satisfying vegetarian main. This high protein, healthy family dish is ideal for weight loss, keto, or clean eats meal plans.
Press the firm tofu for 20 minutes to remove excess moisture, then cut it into 1-inch cubes.
In a large nonstick skillet or wok, heat half the sesame oil over medium-high heat. Add tofu cubes in a single layer and sear until golden on at least two sides, about 3-4 minutes per side. Remove and set aside.
Add remaining sesame oil to the pan. Sauté sliced onion, garlic, and ginger for 2 minutes until fragrant, stirring to prevent burning.
Add all mushrooms and bell pepper. Stir-fry over high heat, allowing any released moisture from mushrooms to evaporate—cook for 4-6 minutes until mushrooms are browned and slightly tender.
Return tofu to the pan. Add soy sauce, cornstarch mixed with water, and black pepper. Stir quickly to coat all ingredients evenly, cooking for another 2-3 minutes until the sauce thickens and everything is piping hot.
Finish by stirring in chopped green onions. Remove from heat and serve immediately.
