Rinse and thoroughly clean the pork stomach, trimming away any excess fat. Blanch in boiling water for 5 minutes, then drain and rinse again.
In a pot, add pork stomach, garlic cloves, bay leaf, black peppercorns, and salt. Cover with water and bring to a gentle simmer over medium-low heat. Skim any foam that rises.
Cover and simmer for 2–3 hours, maintaining gentle heat until the pork stomach is very tender but not falling apart.
Remove the pork stomach from the broth, let cool briefly, then slice into thin strips. Heat oil in a skillet over medium-high heat and quickly sauté pork strips until lightly golden.
Warm the corn tortillas in a dry skillet or over a flame until pliable. Fill each tortilla with pork, top with diced onion, cilantro, roma tomato, a spoonful of salsa verde, and lime juice. Serve immediately.
