Braised sea cucumber with scallion in a savory sauce is a prized banquet dish. A high protein, healthy family recipe with fresh, elegant flavor.
Blanch the pre-soaked sea cucumber in boiling water for 2 minutes, then drain and set aside to remove any residual odor.
Heat 1/2 tbsp sesame oil in a large skillet over medium heat. Add ginger slices and scallion pieces, sautéing for 1-2 minutes until aromatic.
Add sliced shiitake mushrooms and cook for 2–3 minutes until softened.
Add the drained sea cucumber, pour in chicken broth, soy sauce, oyster sauce, Shaoxing wine, sugar, and white pepper. Stir gently and bring to a simmer over medium-low heat.
Cover and braise over low heat for 45 minutes, occasionally spooning sauce over the sea cucumber. If the liquid reduces too quickly, add a splash of broth.
Remove lid and increase heat to medium. Drizzle in cornstarch slurry, stirring gently to thicken the sauce to a silky consistency.
Taste and adjust salt as needed. Serve hot, garnished with a few fresh scallion strips or a drop of sesame oil on top.
