Gur Para is a treasured Indian confection that brings sweetness and joy to every celebration. This traditional dessert is lovingly prepared for family festivals, religious occasions, and special moments.
Mix all-purpose flour, ghee, fennel seeds, cardamom powder, and salt in a large bowl. Rub ghee into the flour until it resembles coarse crumbs.
Gradually add water, kneading gently until a stiff but smooth dough forms. Do not overwork the dough; cover and rest for 15 minutes.
Divide dough into portions, roll out each to about 1/4-inch thickness on a lightly floured surface. Cut into small diamond or square shapes using a knife.
Heat oil in a deep pan on medium-low heat (325°F). Fry pieces in batches, turning often for even golden-brown color. Aim for slow, steady cooking—do not rush or increase the heat.
Remove fried para; drain on paper towels. In a saucepan, melt jaggery with 2 tbsp water on low heat until smooth and slightly thickened. Do not let jaggery syrup reach a hard-ball stage.
Toss fried para quickly in warm jaggery syrup to coat evenly. Spread them on parchment paper to let the syrup set and harden before serving.
