Bhakri Thecha is a traditional Indian bread with authentic flavors and a satisfying texture. This versatile accompaniment is a family meal essential that pairs perfectly with curries and chutneys.
In a large bowl, combine whole wheat flour, jowar flour, and salt. Gradually add water and knead for 8-10 minutes to create a soft, pliable dough.
Divide the dough into 4 equal portions. Roll each piece into a smooth ball and flatten gently with your palms.
On a clean surface, use your fingers or a rolling pin to spread each ball into a thick, rustic disc about 5 inches wide, dusting with flour as needed to prevent sticking.
Preheat a griddle or cast iron skillet over medium heat. Place a bhakri onto the hot surface, cook for 2-3 minutes until the underside develops brown spots, then flip and cook the other side for another 2 minutes. Optionally, finish directly over an open flame for a smoky aroma.
For thecha: Using a mortar and pestle, pound green chilies, garlic, cilantro, salt, and 1 tbsp oil until coarse. Serve the freshly made bhakri hot with the thecha spread on the side. Drizzle remaining oil over the bhakri before serving.
