Add chickpea flour, baking soda, salt, red chili powder, cumin seeds, garam masala, and turmeric powder to the mixture.
Slowly mix in water to form a thick, sticky batter; ensure even coating of all ingredients.
Heat oil in a deep pan over medium-high heat; wait until the oil reaches around 350°F (shimmering but not smoking).
Drop small spoonfuls of the batter into the hot oil; fry in batches for 3–4 minutes each side until golden and crisp, turning occasionally for uniform color.
