Amalfi Coast lemon cream-filled sponge dome is sunshine in dessert form. This exquisite mediterranean creation is a family favorite from the Campanian coast.
Preheat the oven to 350°F (175°C). Grease a dome or cupcake pan and lightly dust with flour for easy removal.
Separate eggs: Whisk egg whites with half the sugar on medium-high until stiff peaks form. In a separate bowl, beat yolks with remaining sugar until pale.
Gently fold the yolks into the whites, then sift in the cake flour and salt in two additions, mixing carefully to avoid deflating the batter.
Stir in melted butter, warm milk, and lemon zest, folding delicately. Pour batter into domes and bake for 18–20 minutes, checking for a springy touch.
While cakes cool, whip heavy cream with powdered sugar and vanilla to medium peaks. For the filling, blend lemon juice with some whipped cream for brightness.
Using a paring knife, cut out a small cavity from the base of each dome; pipe in the lemon cream mixture, sealing with removed sponge if desired.
For a glossy finish, brush domes with additional lemon juice, then dust with extra powdered sugar if desired. Chill domes at least 1 hour before serving for ideal texture.
