1. Preheat oven to 325°F. Pat the bone-in turkey breast dry and rub it evenly with kosher salt, pepper, thyme, and sage.
2. Melt butter in a roasting pan over medium heat, then add chopped onion, celery, and carrot. Sauté for 5 minutes until softened.
