Heat a large skillet over medium-low heat, add pine nuts, and toast them for 2–3 minutes, stirring constantly until golden brown, then transfer out immediately to prevent burning.
Increase the heat to medium-high, pour in olive oil, and add finely chopped scallions. Stir-fry for 30 seconds until fragrant.
Add corn kernels and diced red bell pepper to the pan, spreading them evenly. Stir-fry for 3–4 minutes, keeping everything in a thin even layer to ensure even cooking.
