Preheat the oven to 350°F and grease a 9x13-inch baking dish to prevent sticking.
Melt the butter in a large skillet over medium heat; add onion, celery, and bell pepper. Sauté for 7–8 minutes until vegetables are softened and fragrant.
Add the oysters (with liquid) and fresh parsley to the skillet. Cook for 2–3 minutes, just until oysters begin to firm; then remove from heat.
In a large mixing bowl, combine the sautéed mixture with French bread cubes. Gently fold in chicken broth, eggs, thyme, black pepper, salt, and hot sauce. Toss until bread is well moistened but not soggy.
