Sweet corn and toasted pine nuts are wok-tossed for a colorful, naturally sweet side dish. This vegetarian family favorite is healthy, vibrant, and a staple at Chinese banquets.
Heat a wok or large skillet over medium heat and add the pine nuts. Toast gently for 2–3 minutes until golden and fragrant, stirring constantly to prevent burning.
Add 2 tbsp vegetable oil to the wok, then increase to medium-high heat. Add chopped scallions and red bell pepper, sauté for 1 minute until slightly softened.
Stir in the corn kernels and toss for 3–4 minutes, allowing kernels to develop a little color while keeping them juicy and crisp.
Season with salt, white pepper, and sugar. Stir well to distribute flavor evenly.
Return the toasted pine nuts to the wok, toss everything together for another minute over medium heat, then serve immediately for optimal texture and color.
