Tender beef in a rich, aromatic curry sauce is spooned over steamed white rice. This protein-packed family comfort bowl brings warming spices to an everyday Chinese rice plate.
Rinse the white rice thoroughly and cook in a rice cooker or on the stovetop to yield fluffy steamed rice; keep covered and warm.
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and sear until browned on both sides, about 2–3 minutes. Remove beef and set aside.
In the same pan, add the remaining 1 tbsp oil. Add sliced onion and sauté over medium heat until just golden and aromatic. Stir in carrot and potato; cook for another 4–5 minutes until slightly softened.
Sprinkle curry powder over the vegetables and stir frequently for 1 minute to toast the spices. Pour in water or beef broth, soy sauce, salt, sugar, and black pepper. Bring to a simmer and cook uncovered for 10–12 minutes, until potatoes are fork-tender.
Return the beef to the pan. Lower the heat to medium-low and simmer together for another 5 minutes, allowing flavors to meld and the beef to remain tender—do not overcook.
Arrange a portion of hot steamed rice in bowls. Spoon the curry beef and sauce over the rice and serve immediately.
