Heat 2 tbsp vegetable oil in a large skillet over medium heat. Once shimmering, add cumin seeds and let them crackle for about 30 seconds until aromatic.
Add finely chopped onion and sauté on medium-high heat for 3-4 minutes until translucent and just beginning to brown.
Stir in minced ginger and chopped tomato, then add turmeric, coriander, and red chili powder. Cook on medium heat for 3 minutes, stirring until tomatoes soften and the spice base becomes fragrant.
Add shredded cabbage (green cabbage) and 1 cup green peas. Sprinkle salt evenly and mix thoroughly to coat the vegetables in the spice mixture.
Reduce heat to low, cover with a lid, and cook for 12–15 minutes, stirring every 3–4 minutes to prevent sticking and ensure even cooking. Once the cabbage is tender but still slightly crisp, remove the lid and cook uncovered for 2 more minutes to allow excess moisture to evaporate and flavors to concentrate.
