Cooling mung beans are simmered with rice into a soothing porridge prized for its detoxifying properties. This healthy, vegetarian family dish is light, refreshing, and traditionally served in summer.
Rinse mung beans thoroughly under cool running water to remove any debris.
Soak mung beans in water for 30 minutes, then drain.
Combine mung beans, jasmine rice, and 7 cups of water in a large pot. Bring to a boil over medium-high heat.
Once boiling, reduce heat to low and simmer uncovered for 40–50 minutes, stirring occasionally to prevent sticking.
When the beans and rice are soft and the consistency is creamy, season with salt, stir, and simmer for 5 more minutes. Serve warm or at room temperature.
