Tender napa cabbage and soft tofu are simmered in a light broth for a gentle, comforting soup. This vegetarian, healthy family soup is low calorie and perfect for a calorie deficit plan.
Slice napa cabbage into 1-inch pieces and thinly slice the carrot, mushrooms, and green onion. Cut tofu into 3/4-inch cubes.
In a large pot over medium heat, add sesame oil and minced garlic. Gently saute for 1 minute until fragrant but not browned.
Add carrots and shiitake mushrooms, stirring for 2-3 minutes to release their flavor.
Pour in the vegetable broth and bring to a gentle simmer over medium-high heat.
Add the napa cabbage. Simmer uncovered for 8 minutes until softened, then reduce to medium-low, gently add tofu cubes, and simmer for 5 more minutes.
Season with soy sauce, salt, and white pepper. Taste and adjust seasoning if needed.
Turn off the heat. Sprinkle in green onions before serving to preserve their fresh flavor.
