Tear the day-old country bread into bite-sized pieces and place in a large mixing bowl.
Sprinkle the bread with half of the red wine vinegar and 2 tablespoons of water, then toss gently to moisten evenly. Allow to rest for 10 minutes to soften but retain some chew.
Meanwhile, dice the ripe tomatoes and cucumber into bite-sized chunks. Thinly slice the red onion. Stack and tear the fresh basil leaves.
Add the tomatoes, cucumber, red onion, and basil to the bread. Drizzle with extra virgin olive oil and the remaining red wine vinegar.
Season with kosher salt and freshly ground black pepper, then toss everything together carefully until combined. Cover and let sit for 20–30 minutes at room temperature; toss again just before serving for best flavor and texture.
