Boiled beef tongue sliced and served warm with salsa verde. This high protein mediterranean dish is a traditional carnivore family meal rich in nutrients and Italian heritage.
Rinse the beef tongue thoroughly and place it in a large pot with enough water to fully cover.
Add celery, carrot, onion, parsley, bay leaves, black peppercorns, and salt to the pot.
Bring to a gentle boil over medium-high heat, then reduce to low and simmer uncovered for 2.5–3 hours, occasionally skimming off foam and fats.
When the tongue is tender, transfer it to a cutting board and peel off the tough outer skin while still warm.
Slice the tongue thinly, arrange on a platter, and serve immediately with salsa verde or reserved cooking broth.
