Methi Ladoo is a classic Indian sweet made by shaping flavored dough into round, bite-sized treats. This beloved dessert is a staple at festivals, weddings, and family celebrations across India.
Heat a large nonstick pan over medium-low heat. Add ghee and allow it to melt gently without smoking.
Add the powdered methi seeds and stir for 2-3 minutes until aromatic but not burnt, adjusting heat to prevent browning.
Stir in the whole wheat flour, and cook, stirring continuously, for 10-12 minutes until the mixture turns golden brown and releases a nutty aroma. Lower the heat if necessary to avoid scorching.
Add chopped almonds and cashews; continue to cook for another 3-4 minutes, letting the nuts roast lightly.
Turn off the heat. While the mixture is still warm, mix in grated jaggery, cardamom powder, nutmeg powder, and salt. Stir thoroughly to melt the jaggery and combine evenly.
Allow the mixture to cool slightly, so it is comfortable to handle but not completely cold. Shape the mixture into round ladoos using your palms, pressing firmly for a compact texture.
Let the ladoos cool completely at room temperature, then store in an airtight container.
