Whole steamed crab with ginger and vinegar is a luxurious celebration dish. A high protein, fresh seafood centerpiece for special family dinners.
Scrub the whole fresh crabs thoroughly under cold running water, then drain. Prepare a large steamer by bringing 2 inches of water to a rapid boil over high heat.
Lay slices of fresh ginger and whole scallions on the bottom of the steaming rack to provide aroma and keep the crab elevated.
Place the crabs shell side up on top of the ginger and scallions. Cover tightly and steam over high heat for 15–18 minutes depending on crab size (1 to 1½ lbs crab: 15 min; larger: up to 18 min).
While crabs are steaming, make the dipping sauce: combine rice vinegar, soy sauce, sugar, and julienned ginger in a small bowl. Stir until sugar dissolves.
Once steaming is complete, turn off the heat and let the crabs rest for 3 minutes in the steamer to let the juices redistribute. Serve immediately with the ginger-vinegar dipping sauce.
