Pat the eel pieces completely dry using paper towels to ensure a crisp coating.
Season both sides of the eel pieces with salt, black pepper, and chopped parsley.
Prepare three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each eel piece first in flour, then egg, then breadcrumbs for even coverage.
Heat vegetable oil in a deep skillet or heavy pan to 350°F (medium-high heat); use a thermometer for accuracy.
Add the eel pieces in batches, without overcrowding, and fry for 4–5 minutes per side or until golden brown and cooked through. Drain on wire rack or paper towels.
Serve hot with fresh lemon wedges, garnished with additional parsley if desired.
